So, I have removed gluten from my diet over the past 2 months. All bread, pasta, cookies, pizza, everything that has gluten has been removed from my diet. I have had some by accident – who knew that a Slim Jim stick of jerky would have gluten and that most soy sauces have gluten?
I immediately felt better – had more energy, felt less drowsy after eating and I sleep better and more soundly. I have also lost about 17 pounds and my A1C has dropped by 3/10ths of a point since it was last checked 3 months ago. My blood pressure has dropped considerably too – losing the 17 pounds has a lot to do with it so my doctor said I could drop one of my blood pressure medicines which is a huge deal for me.
I have become a firm believer in a gluten-free diet. The hassles associated with changing your meal plan like shopping for gluten free products are minimal. Heck, even Wal-mart has a gluten free section and Fred Meyer and Costco both tout gluten free products and WinCo has bulk gluten free pasta suitable for storage. A couple of the local pizza joints in town offer gluten free crusts. It isn’t that hard. I already eat tons healthy stuff – turkey, chicken, salmon, lots of salads and vegetables – I just don’t have a big chunk of bread or regular wheat pasta with my meals and that has made a big difference.
I read an article a week or so ago about the gluten free thing and the general tone of the article had the usual suspects poo-poo’ing it but some research says there may be something to it – either we are more sensitive to wheat or the changes in the genetic make-up of modern wheat are causing the issues in folks like me who are just ‘gluten sensitive’.
After reading Wheat Belly by William Davis, M.D, and after seeing the results right before my eyes, I heartily recommend the book and trying out a gluten free diet for a while and see how you feel. It’s pretty hard to deny what I am seeing and experiencing.

If you are like me, (and unfortunately, I don’t think I am unique in this) I am diabetic and am packing around 50+ extra pounds around the middle with high blood pressure to boot, it is worth giving the gluten-free diet thing a try.

My husband was having all kinds of health issues...headaches, tummy trouble, seizure like episodes etc. he is fairly young, active and otherwise healthy, so we were all stumped. Long story, but eventually we removed gluten from his diet and all the symptoms went away. It's been about 2 years for him.
Coming up on 4 years being gluten free for me! I was sick for a really, really long time before being diagnosed with Celiac disease.
Switching to a gluten free diet literally saved my life.
It has been a big change for me and for the better. I don't have celiac but I do know that eating wheat has caused, um, shall we say, digestive problems. Had a few graham crackers over the weekend with some s'mores and yes, I can tell the difference.

We had some delectable parmesan coated tilapia (gluten free) yesterday. Check your frozens aisle at the store. Wish we hadn't disposed of the bag, so I knew what brand.
Hubby and I continue on our diet. He's lost nearly 60, and me 30 on this round. 40 more pounds and his prostate is outta there!
2 years ago, I began eating a “Clean” diet – I stopped eating all processed, factory prepared foods.
“If it grew on a tree or bush, walked the Earth, or swam in the ocean…I’ll eat it. Factory prepared? Not at all.”
It was absolutely the BEST decision I’ve ever made. I had struggled with unaccountable weight gain for years, and generally felt terrible all the time. Since starting to Eat Clean, I’ve lost over 60 lbs and have a completely different relationship with food. I now see it as the fuel my body requires. My stomach is no longer a trash bin! About 2 + months ago, I removed almost all gluten from my diet, too. Talk about a significant difference…no more gassy belly, and I’m definitely less tired after I eat a large meal.
I guess it has only side effect if you consume to much of it. But anyway, at least you are aware of what you are going to eat and maintain a healthy lifestyle. I really adore you for being health and food conscious. It only shows that you are very disciplined when it comes to the food you eat.
